These spices are hygroscopic in nature,and being sensitive to moisture,their absorption of moisture may result in discoloration,hydrolytic rancidity,mold growth,and insect attack.Furthermore,since these spices contain volatile aromatic principles ,the loss of these principles,and the abssorption of foreign odors during processing,transportation and storage may pose serious problems.The paper elaborates the preventive and precautionary measures to be taken during the entire post harvest phase of the seed spices to minimize losses both,qualitative and quantitative.
